Apple and cinnamon breakfast muffin

For a delicious start to your morning! Packed with fiber thanks to the oatmeal and rich in vitamins from the apples and carrots.

Ingredients

VMakes about 10 muffins, 65 grams each.

  • 50 grams oatmeal
  • 125 ml water
  • 75 grams carrot
  • 50 grams sunflower seeds
  • 40 grams raisins
  • 2 apples
  • 1.5 teaspoons cinnamon
  • 1.5 tablespoons coconut oil
  • Pinch of Himalayan salt
  • 3 to 4 grams agar agar powder*

*You can also replace the agar agar with 2 to 3 heaping tablespoons of buckwheat flour.

Preparation method

Tip: Is the dough too dry after step 4? Add a little extra water.

    Grind 200 grams of oat muesli and 50 grams of sunflower seeds in a food processor, then mix with 50 grams of unground oat muesli.

    Preheat the oven to 100 degrees and melt the coconut oil in a small bowl. Then set the oven to 140 degrees.

    Peel and grate the carrot, peel and chop the apple, and add this together with the raisins and cinnamon.

    Then mix it with the melted oil, a pinch of Himalayan salt, water, and the agar-agar.

    Divide the mixture into the muffin cups and press down firmly.

    Place in a preheated oven for approx. 40 minutes. If you have a large muffin tin, it may take a little longer. Then place the muffins in the refrigerator, allow them to cool, and only then cut them.
